Protein Puffs Chicken Parmesan

WHAT YOU WILL NEED:

INSTRUCTIONS: 

  • Retrieve a cast iron skillet and preheat your oven to 350 degrees Fahrenheit.
  • Butterfly the chicken breast by cutting it horizontally, but not all the way through. Place plastic wrap over the chicken breast and use a meat mallet or rolling pin to pound it to a thickness of approximately 1/2 inch.
  • Heat the cast iron pan over medium heat and add enough oil to pan fry the chicken. (Optional: For a healthier chicken, after pan-frying, transfer the cooked chicken to a baking sheet and bake until it reaches an internal temperature of 160 degrees Fahrenheit. The residual heat will carry it over 165 degrees Fahrenheit.)
  • Season the pounded chicken breast generously with your preferred seasonings.
  • In a shallow dish, beat an egg. Dip the seasoned chicken breast into the beaten egg, ensuring it is fully coated.
  • Dredge the egg-coated chicken breast in the crumbs of Margherita Pizza Protein Puffs, pressing gently to adhere the crumbs to the chicken.
  • Once the cast iron skillet and oil reach a temperature of around 350 degrees Fahrenheit, carefully place the chicken breast in the pan. Cook for approximately 1-2 minutes on each side to achieve a nice color and texture.
  • Transfer the skillet with the partially cooked chicken to the preheated oven and bake for about 10 minutes.
  • While the chicken is baking, prepare the sauce by mixing crushed tomatoes and pesto in a bowl.
  • After 10 minutes, remove the skillet from the oven and generously cover the chicken with the tomato mixture and mozzarella cheese.
  • Return the skillet to the oven and switch the oven setting to high broil. Broil for a short period of time, keeping a close eye on it, until the cheese melts and develops a golden, bubbly texture.
  • Once the cheese is melted and the chicken is cooked through, remove it from the oven.
  • Serve and enjoy your deliciously baked chicken with the flavorful tomato and mozzarella topping!
