INGREDIENTS:
- 1 large chicken breast (butterflied & pounded thin)
- 1 egg (beaten)
- 1–2 cups Twin Peaks Margherita Pizza Protein Puffs, crushed into crumbs
- Seasonings of choice (salt, pepper, Italian seasoning, etc.)
- ½ cup crushed tomatoes
- 2 tbsp pesto
- ½ cup shredded mozzarella
- Oil for pan-frying
INSTRUCTIONS:
HOW TO
- Preheat oven to 350°F.
- Butterfly and pound chicken to ½-inch thickness.
- Heat a cast iron skillet over medium heat with a little oil.
- Season the chicken well.
- Dip chicken in egg, then coat fully in crushed Protein Puffs.
- Pan-fry 1–2 minutes per side until golden.
- Transfer skillet to the oven and bake 10 minutes.
- Mix crushed tomatoes + pesto for the sauce.
- Remove chicken, spoon sauce on top, and add mozzarella.
- Switch to broil and cook until cheese is bubbly and golden (watch closely!).
- Remove from oven and serve hot!
