INGREDIENTS:

  • 1 large chicken breast (butterflied & pounded thin)
  • 1 egg (beaten)
  • 1–2 cups Twin Peaks Margherita Pizza Protein Puffs, crushed into crumbs
  • Seasonings of choice (salt, pepper, Italian seasoning, etc.)
  • ½ cup crushed tomatoes
  • 2 tbsp pesto
  • ½ cup shredded mozzarella
  • Oil for pan-frying
INSTRUCTIONS:

HOW TO

  • Preheat oven to 350°F.
  • Butterfly and pound chicken to ½-inch thickness.
  • Heat a cast iron skillet over medium heat with a little oil.
  • Season the chicken well.
  • Dip chicken in egg, then coat fully in crushed Protein Puffs.
  • Pan-fry 1–2 minutes per side until golden.
  • Transfer skillet to the oven and bake 10 minutes.
  • Mix crushed tomatoes + pesto for the sauce.
  • Remove chicken, spoon sauce on top, and add mozzarella.
  • Switch to broil and cook until cheese is bubbly and golden (watch closely!).
  • Remove from oven and serve hot!
